Smoke Jerky for 2 hours using no dryer.
Smoke at 150 degrees.
Then I dump the smoke box, ashes and wood,
(BTW I only use 1 small chunk of hickory or mesquite) Make sure not to
dump anywhere combustible. And turn down the heat to 120 degrees--add
jerky dryer and check every hour or so until dried to your liking.
I make around 15 lbs of jerky a month and
have been trying to get it down to a science. I bought a Digi Q from
BBQ Guru and I can set the temp to EXACTLY what I want to smoke at.
There is no temp swing. It works perfectly with the SmokinTex.
