Smoked Pork Loin by Chef Sandy

  • 4 lbs. pork loins

  • 3 tbsp. kosher salt

  • 3 tbsp. brown sugar

  • 1 tbsp. black pepper

  • 1 tsp. cumin

  • 1 tsp. paprika

  • 1 tsp. sage

  • ½ tsp. cayenne pepper

Mix spices for rub.

Rub generously all over pork loins.

Smoke at 225°F for 2.5 hours or until internal temp reaches 155°F in your SmokinTex smoker. We used 2 ounces of apple wood chips but use what you like.

Let rest while internal temp rises.
