Guess I must have the first one in Mexico. And what it took to get this Smokin' Tex to Mexico is a story unto itself. Yesterday, my second set of ribs were a complete success. 15 people were here and all asked me when was the next batch coming out. No left overs after 20 pounds to take home for anyone. I've been smoking meat all my life and you would think at my ripe age of 61 I would have seen it all. Wrong. Totally wrong. And I was taught by the some of the best cowboys in Texas, meaning really good cooks, how to do it right on the big monsters. Well, the big monster I've got on my ranch in the Yucatan just became a conversation piece and it was another import from Texas. Now, what are my drinking buddies and I going to do since I don't have to sit there and watch it, adjusting the temp, adding wood....................? Wow! All I can say is WOW! David W.
