First post, just received my 1400 last week. I know it's superficial and shallow but I do like the red ring. I tried a 12 pound brisket with hickory and 3 briquettes at 225 for 14 hours. It was a little tough and very small to no red ring. Next was a test rack of baby backs (2 pound) with only mesquite infused briquettes (5) at 225 for 4 hours. Great smoke production great red ring, over half the thickness of the meat. Very tender with just a little pull on the bone, best ribs I've ever had.

Tried the smoked nuts recipe. Turned out a little on the smoky side. Next time I'll only use one small hickory chunk.


Love this thing looking forward to many testings to get it down.
