I'm a newbe here, just wanted to say that I have been using a Bradley smoker for about 10 years & after replacing many parts including 2 burners, 1 biscuit burner & 2 doors, I finally made my way to the Smokintex site. I have to say that I am now in heaven, the ease of using this smoker is amazing, & it is built like a brick smokehouse;). I tried smoking cheddar cheese with my Bradley but it would get so hot even with the door slightly open that the cheese would melt thru the grates. I bought the cold plate for the Smokintex & for the first time ever I had perfect smoked cheese in just 45 minutes. I am so glad I took a chance on this smoker, the ease of using it is really a God send as most of you already know. Thanks for all your help Scott, I think my smoker troubles are done for life:D
