I got my 1400 this week. I have seasoned it as per the instructions and tomorrow I am going to do 6 racks of Baby Back Ribs for a family BBQ. I told them if it comes out horrible we will order a Pizza !
I have a dry rub recipe and a BBQ sauce recipe that I have used for a long time on the grill and it is really good so I am going with that tomorrow.
My plan is to lay them flat on the racks and cook them 3-4 hours at 225 with a couple of chunks of Hickory.
I have a few questions that I hoped you guys could answer for me;
1) Do I put the ribs membrane (removed) side down and just leave them that way or do I need to flip them over anytime during the cooking time ?
2) Since I will be using at least a couple of the racks do I need to rotate the ribs from top to bottom at anytime ?
3) Should I put any BBQ sauce on near the end of the cook cycle or just make the sauce and serve it on the side ?
4) With the cook time is there a pretty wide window or is it easy to overcook them ?
