Many thanks go to Scott Walter of SmokinTex who heard my cry for help and immediately responded with the right solution to my problem. I had completed a batch of smoked venison sausage and was in the process of smoking one of two makings of venison summer sausage when the smoker didn't quite make it to the required internal temp, but was near enough to be complete. To my horror, when I put the last making in, the smoker would not heat. Scott had me trouble shoot and identify it was the element and not the thermostat. Before I bought my SmokinTex I was a die hard charcoal fan but the SmokinTex had won me over and I've used nothing else for the last five years. My old charcoal smoker sat rusting away under the deck. I was forced to revert to it to finish the sausage until a replacement part arrived. I was less than satisfied with the end product of the old smoker and will definately give it the old heave-ho. Thanks Scott, I expect to be SmokinTex again by the weekend. :D
