Twice Baked Mashed Potatoes

Ingredients

  • Potatoes

  • Salt

  • Pepper

  • Milk

  • Butter

  • Sour Cream

  • 1 Egg

  • White Pepper

  • Nutmeg

  • Crumbled Bacon

  • Cheese

  • Chives

Directions

Rub the skin of the potatoes in olive oil and smoke at 225° for about 2 hours, using hickory wood. When the potatoes have softened, remove from the smoker but don’t allow to cool.

Remove the pulp from the skin and mash in butter, milk, sour cream, and one egg. Add a pinch of white pepper, a pinch of nutmeg, and then salt and pepper to taste.

Top with bacon crumbles and cheese before transferring to the oven, and bake at 350° for 15 minutes.

Just before serving, top with fresh green onion chives.

This recipe is also perfect for making the night before or morning of, refrigerating, and reheating in the oven just before serving. If this is your goal, skip the oven until you’re ready to serve and then heat at 350° for 40 minutes before serving.
