Jerk Ribs

  • 2 racks of country style pork ribs

  • 2 tbs. dried minced onions

  • 1 tbs. onion powder

  • 4 tsp. ground thyme

  • 2 tsp. ground allspice

  • 1/2 tsp. ground nutmeg

  • 1/2 tsp. ground cinnamon

  • 1 tbs. granulated sugar

  • 2 tsp. black pepper

  • 1 tsp. cayenne pepper

Blend all ingredients well. Rub all over ribs. Smoke-cook 3-4 hours at 225°F using 2 ounces of hickory.
